Recipe: mee ketang

Hello everyone! Once I moved to my permanent site, I decided that I wanted to learn how to cook Khmer food more. So far, most of the food that I have had and tried is so good! I keep telling my host mom that I know how to cook in the US, but I do not how to cook while I am in Cambodia, but I want to learn.


So, I also want to share what I have learned to make so far. Mee ketang!

I never had it when I was in the Takeo province, but that is because apparently it is only popular in the northern part of Cambodia and a staple food in Banteay Meanchey and Battambang. I am for sure a person who loves noodles and so when my host mom asked if I wanted to learn how to make it, I of course said yes. This is a rough observation of what we did, and so in classic Alex style, there are no official measurements :)




Mee Ketang Recipe:

Ingredients:

-Chinese broccoli

-thick noodles

-shrimp

-beef

-garlic (minced)

-eggs

-oyster sauce

-salt

-pepper

-tomato paste


Instructions:

1.) Wash the Chinese broccoli and peel the stem so the outer coating is no longer on it. Pick out the wilted/spoiled pieces to throw away. If there is a stem too small to peel, cut off the leafy part and put aside for later.


2.) Wash the shrimp and beef and cut the beef into small pieces.


3.) Mince garlic


4.) Separate the Chinese broccoli between the stems and the leaves. Boil the Chinese broccoli, first boiling the stems and then adding the leaves later.


5.) Once boiled, put into a heated wok: oil and the Chinese broccoli. Stir fry the Chinese broccoli, and then add minced garlic. After that, crack into the wok three eggs to fry.


6.) Add into the wok the beef and the shrimp. Once all of that is in the wok, add in oyster sauce (add a good bit, but not too much) and then add salt, pepper, and tomato sauce/paste. My host mom added enough to make it taste good so I recommend to do the same :)


7.) Lastly, add in the noodles. These noodles she bought at the store!


8.) Stir fry until all is cooked and serve!


Peeling the Chinese broccoli was tedious but overall this recipe was easy enough! I thank my host mom for showing me this recipe.
